Level 1 — evidence, set by people. Every entry carries its source and a date. The tier (★ Dedicated / GF-serving) describes the kitchen; ★ Dedicated is only ever confirmed by a human — never by software, never by popularity.
Level 2 — the community layer. Coeliacs who ate somewhere without a reaction can vouch, with a date. Vouches are reviewed by a person, displayed as a count, and never change a tier. The ✦ experience score rates taste and welcome — explicitly not safety.
What we never do: take bookings, sell placement into tiers, or put safety information behind a paywall.
